Adventures in Breakfast: One-Eyed Toast



Breakfast is hands down my favorite meal.  I love how versatile it is.  It can be sweet or savory, heavy or light.  And the genius behind brunch?  Props to whoever that was.  One of my favorite things to make for breakfast is a big batch of Grandma Carol's Waffles.  But this morning, I was in a savory mood.  I had some artisan 3-cheese bread leftover from dinner and wanted to do something special with it.  Thanks be to my dad for introducing me to this one-eyed toast recipe when I was 10 years old. 


It combines an egg with toast, genius!  What two things go better together at breakfast?  I remember the first time I had one-eyed toast; I was visiting my dad for the summer in the itty-bitty town or Goldfield, NV.  I was intrigued watching him use a small glass to cut the toast and fry an egg where the hole was.  He said the trick to making it wonderful is lots of butter, just like a grilled-cheese sandwich. 

So, it was this morning, I paid homage to a fun summer with my dad and made some one-eyed toast.  Unfortunately, as you might be able to tell in the picture, Baby Boy was especially needy, and I left the egg in the pan too long, over cooking the yolk.  The best way to have this is with a runny yolk, so when you break it, it runs out onto the bread.  My favorite part: the little toasted circle cut outs, words can't describe the happy place I go to when I bite into that little round of buttery goodness. 

Next time I make this, Baby Boy is just gonna have to fuss for a bit while momma gets her breakfast on! 


One-Eyed Toast
Serves 4

4 Pieces of bread, sliced - Works with any kind of bread.  I love this with whole wheat bread.
4 eggs
Butter (enough to butter both sides of each slice of bread)


Heat a griddle to about 300 degrees.  Butter both sides of each piece of bread.  Use a 3" cookie cutter or even a small wine glass to cut a hole in the center of each slice of bread.  Place the bread and cut out circles on the griddle and toast for about 30 seconds.  Break an egg into each hole and cook for about 3 minutes or enough time for the egg to set.  Flip each piece of bread and egg, cooking the other side until the bread is toasted and the yolk is cooked to your liking.  

I like to serve mine with sliced peppers or a fruit salad.  Enjoy!!

  1. I don't know why I've never had this. I've always heard of it as 'eggs in a basket' on films such as V for Vendetta, but I've never tried it. Made it the same day you posted this and served with tomatoes. You don't even need cheese on these eggs, and it was delicious with our whole grain fiber powered toasted bread. yum yum yum.

  2. My mom always called this Toad in a Hole. Personally, I prefer Eggs in a Basket. Your bread sounds like the perfect way to enjoy this breakfast!
