Just a Bit Nutty Oatmeal

I really love oatmeal. It's quick, nutritious and delicious. My oatmeal changes as my health concerns change. My absolute favorite way to eat oatmeal is with lots of real butter a handful of brown sugar and a good amount of whole milk or cream. I know, brown sugar is to be avoided, but hey butter and whole milk are good for you; if you don't believe me read Nourishing Traditions, it will change your life.
I know, I know, I should soak my oatmeal to really get the best health benefit; I'm just not there yet. But back to my changing oatmeal. When I was in my early twenties, I ate the instant oatmeal (for shame, I know) thinking that I was making a healthy breakfast choice. In my mid-twenties, when I thought I was being "healthy" I ate it with artificial butter sprinkles, sweetener and skim milk. Boy, was that gross. Then I got tired of my beloved oatmeal tasting like plastic goo and started eating it with jam stirred in and some 1% milk. Eventually, I embraced my favorite way to eat oatmeal and started enjoying my oatmeal breakfasts again.
Recently, I've been trying to create my own weight loss wagon and finding a way to eat the whole, unprocessed foods I enjoy and some of the processed ones I will always love. So, my oatmeal has evolved again to eliminate the processed sugar. My newest oatmeal breakfast manifestation is what I like to call Just a Bit Nutty Oatmeal. It came about this morning as I was rushing to get out the door in time for work, but I wanted to make a breakfast for me and my family that was healthy. I hate to admit, that I'm pretty sure my 11 year old eats frosted flakes for breakfast when he is on his own and I don't make something for him.
I raided the many jars in my pantry and threw in some raisins for sweetness, some pecans because I think pecans are awesome, and some sunflower seeds because that jar was behind the pecans and I thought, "why not?". And because I think oatmeal just isn't oatmeal without butter and milk, I finished it off with some delicious butter and whole milk. It was so easy and quick that I had time to sit at my breakfast table and eat instead of at my desk or in my car. And that was so sweet, I didn't even miss the brown sugar.
Just a Bit Nutty Oatmeal
Serves 4
4C. Water
2C. Rolled Oats
Butter
Whole Milk
Raisins
Pecans
Sunflower Seeds
Chia Seeds (just incase you want to add some Omega 3)
Boil water and add oats. Cook for 5 minutes. Pour into bowls and add all the wonderful toppings to your liking. Enjoy!

Yum! This sounds delicious! I usually add some honey to my oatmeal, because I can't really stand it otherwise, lol.
