It's okra time in the desert and boy am I ready! I must admit that okra used to be on my list of veggies I tolerated but never really enjoyed. I just couldn't get over the "slime" factor. Fried okra is good, but I really try not to eat deep-fried vegetables. Last year about this time, I was getting tons and tons of okra in my CSA basket and didn't know what to do with it. Then I found this method. Hallelujah! **light rays from the sky, angels singing, doves flying**
Roasting is really my go-to thing to do with veggies when I don't know what to do with them. Roasted okra is now one of my favorite treats. Roasting takes the slime out of the okra and makes it taste fantastic. It's super-easy, and a batch rarely makes it more than a few hours in my house.
All you have to do is rinse and cut the okra, place on a cookie sheet with some olive oil and salt and roast. Here's a picture of these green gems before I put them in the oven, aren't they pretty?!
When they are done, they're as addicting to eat as a bowl of popcorn, so be generous with your servings!
Roasted Okra

2 lbs fresh okra (or whatever quantity you have)
2 Tbs. Olive Oil
Salt, pepper and other spices to your liking.
Preheat oven to 375. Rinse the okra. Cut into 1/2"-1" slices and spread on a cookie sheet in a single layer. Spray or drizzle with olive oil. Sprinkle on salt and spices and stir. Roast for 15 minutes, stir and roast for another 5-8 minutes depending on how "roasted" you like them. Enjoy!!

Not very experienced with roasting veggies, but this sounds delish. What temp do you turn the oven to?
ReplyDelete375 for me, but I've heard of others roasting at 400, so it depends on your oven. Start out lower and raise the temp if you need to. :)
DeleteHubs introduced me to okra last year and I fell in love! We steamed ours and put it over some rice. I then attempted to grow some okra...it turned into a sunflower...I'm still trying to figure out how that happened, lol.

At least it grew into something, I would have probably killed it. I have a "brown" thumb and even killed my cactus... yep, I can only admire gardens, not keep one. :)

ReplyDeleteI'm right there with you. I grew up in the Pacific Northwest and okra wasn't something we used in our cooking a lot like (or so I've heard) people who live in the South. :)
DeleteI LOVE okra! When I was a kid, we always grew okra in our garden so I grew up eating it. I will even eat it raw! What a great idea to roast it! Yum! I love roasting too, and roast lots of stuff, can't believe I never roasted okra ;) GREAT post!!
