Athena Creation: Chicken Roll Ups


Having an abundance of greens lately in my farm basket resulted in a surprisingly yummy snack.  I say surprisingly because I'm not really a wrap kinda girl.  I generally shy away from wraps or rolled things.  I'm not quite sure why this is.  However, this is totally wrapped up and I really enjoyed eating these.

I call this an Athena Creation not because I'm the genius who thought to wrap something in a leaf, but because the idea came to my head and I created this out of what I could find in my refrigerator.  I had leftover chicken and a giant bag of some kind of big-leafed green.  I'm not really sure what kind it was.  It looked (and tasted) like giant spinach leaves.  So maybe it was grown-up spinach in stead of baby spinach.  I made a chicken salad with what I had in the refrigerator and rolled it up in the leaves.  Healthy. Simple.  Easy.  Delicious.

These babies made a delicious snack at work today.  So much so, I took a later lunch because they were so filling.  So I offer the recipe for your enjoyment of this green, chicken-ey, rolled-up goodness. 

Chicken Roll Ups ala Athena
Serves 4

1 cooked chicken breast chopped or shredded
1/2C or so plain yogurt (more or less to taste and preferred texture)
1/2C chopped daikon radish (or celery or other crunchy mild vegetable)
1/4C. chopped onion
2Tbs. pickle relish
salt and pepper to taste
1 bunch fresh greens with large leaves (I think I used big spinach)

Combine all ingredients except for greens in a bowl.  Put chicken mixture in leaves, one at a time.  The amount will vary based on the size of the leaf and how large you want your rolls.  Roll the leaves up like a burrito with both ends closed.  Enjoy!

    1. The whole wrap thing is starting to grow on me. Maybe it's just the ones with tortillas I don't like... :)

  2. That looks delicious! I've never had daikon radish before; I have to admit I don't even know what it looks like!

    1. It kinda looks like a turnip but instead of being "fat" it's long and slender. It's really mild. I got it in my farm basket, otherwise I probably wouldn't have bought it. :)
