Whole Wheat Banana Bread



I love banana bread.  This recipe is my grandma's but with my take on it by using whole wheat flour.  I use freshly-ground whole (hard white) wheat flour, but the recipe works with all-purpose flour or King Arthurs White Whole Wheat Four.  Now, whole wheat flour requires a bit more liquid, so feel free to be very generous with your liquid measurements and maybe add a bit more for good measure.  :) 



My favorite way to enjoy this is warm with lots of butter and a tall glass of whole milk.  YUM!

Whole Wheat Banana Bread
Makes 1 Loaf

2 tsp. Lemon Juice
2/3 C. Milk
2 1/3C. Whole Wheat Flour (I use freshly ground hard white wheat)
1 2/3C. Sugar, sucanant, maple syrup, or honey
1 1/4 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
1 C. Softened Butter
1 C. Mashed Bananas
2 Eggs

Preheat oven to 350 degrees.  Place lemon juice in milk, set aside.  Sift all dry ingredients into mixing bowl.  Add butter, bananas, & soured milk.  Mix until moistened, beat vigorously for 2 minutes.  Add eggs, beat 2 more minutes.  Pour into a greased and floured 9" loaf pan or a bunt pan.  Bake at 350 for approx. 35 minutes.  Cool.  Enjoy!

  1. How would you recommend banana bread muffins, as far as cooking settings? I prefer making the muffins because they are super easy on the go. Also, if I wanted to top the bread/muffins with walnuts, do you recommend toasting them beforehand? Thanks! :)

    1. For Muffins, I would set the timer for 20 minutes, then check them to see if they're done. They should take between 20-30 minutes as muffins depending on your oven. You could put walnuts on them either regular or toasted. I'm not a fan of nuts in my baked goods, but I would prefer toasted. :)
