Simple Salmon (My Favorite Preparation)

It's hard to believe that I only started liking salmon about 4 years ago.  I'm a Cod and Halibut kind of girl.  Salmon had too strong a flavor for my tastes.  But one summer, after reading all the health benefits of salmon, I was determined to make myself like this pink fish.

My Handsome Hubby happens to love salmon, so he was very happy to see this addition to our menu.  I must have made salmon two to three times a week for about 2 months.  Eventually, I came to like the flavor, mission accomplished!

In this quest to enjoy salmon, I tried many different preparations.  From a citrus rub, to brown sugar glazes, to seafood soup.  And after all that, my favorite preparation is insanely simple and seasons the salmon with two simple ingredients: Olive Oil and Kosher Salt.  The salt melts and forms a delicious crust on the outside of the meat that is so heavenly.

Having further developed my palate for salmon, I will only buy and eat wild-caught salmon, preferably Alaskan Salmon.  My dad lives in Alaska and keeps me stocked with Halibut and Salmon when I request, so I'm a bit spoiled and prefer to not eat anything different, or farmed with color added.  Wild-Caught Alaskan Salmon has a deep flavor and vibrant color, it makes the farm-raised Atlantic salmon look just sad. Ok, so I guess I'm a seafood snob.

Tonight's salmon, I bought on sale at the store and was wild-caught sockeye salmon, yum!

One fillet was enough for my husband and I to both have seconds (yep, we like salmon that much), feed the baby, and have enough left over for lunches for all three of us tomorrow.  Oh Boy, I can't wait to have this for lunch tomorrow...

You are going to be amazed at how simple this is to prepare, and even more amazed at how delicious and perfect this salmon is.  Your tastebuds will thank you!

Simple Salmon
By Athena

1 Wild-Caught Salmon Fillet
1 Tbs Olive Oil
1 Tbs Kosher Salt - or more to your liking, I tend to like a little more

Preheat oven to Broil.  Line a cookie sheet with sides or a broiler pan with aluminum foil (optional).  Place salmon on sheet or pan and brush with olive oil.  Sprinkle fillet with kosher salt.  Broil on 2nd to top shelf in the oven until the fish flakes easily (about 10 - 12 minutes).  Enjoy!

  11. I love simple! And I'm going to try this next time I have salmon around.

My son turned me on to a simple recipe that I've been using for the past couple of years. You might like it, too: Just melt butter in a frying pan and while it's getting hot sprinkle curry on one side of each piece. Place pieces into the pan (curry side down) and then sprinkle curry on top. Cook until done. Easy peasy!
