We had homemade pizza for dinner tonight. So guess what found it's way into my son's lunchbox?...
I made a whole wheat pizza crust and topped it with what I could find in my refrigerator. Luckily, it turned out deliciously. The moment I heard, "this is good pizza mom" was the moment I decided to put it in his lunch. It was quick because I didn't have to prepare a separate meal. All I did was slice the leftover pizza into sticks.
It is healthy, whole wheat crust topped with organic spaghetti sauce (leftover), fresh mozzarella (leftover), chicken sausage, organic spinach, organic yellow and green peppers. OK, soooo there's a couple of pieces of dark chocolate stuffed in there, but chocolate is a food group right?...
With the pizza, I've included organic gala apples and clementine wedges along with the last of the bag of local cheese curds. Why yes, there is a local place in Arizona that makes real cheese curds, just like the ones that come out of Wisconsin. :) My son can't seem to get enough of these little nuggets of cheesy goodness.
So there you have it, My not-so-little-man's lunch made from Wednesday night's leftovers. It took me 10 minutes to throw it together and clean up. Take that Oscar Meyer!
