Love in my eggs

This morning, my eggs had an extra ingredient in them: love.  It all started with a crazy space clock.  The story behind the clock is that I can't work the crazy thing, so I call it a space clock (because it's complicated like a space shuttle) and my handsome husband sets everything for me (gosh, I love him).

The clock has been acting up lately where instead of the music on the cd waking us up, the alarm sounds.  Yesterday, my alarm went off at 4:48 despite it being set for 4:30 (I have to be at work at 6am).  This morning  my alarm decided to go off at 5:35, well after the time I need to leave for my 35+ minute commute.  Oh, and I had a meeting at 6:30 that I couldn't miss.  Getting ready this morning consisted of putting on the least-wrinkled clothes I could find, brushing my teeth, and putting my hair in a clip.  As I rushed downstairs, my handsome hubby had made me scrambled eggs, fresh fruit, and coffee.  He even had it boxed up for me to take with me. A quick, healthy breakfast made with love.  I feel so blessed to have a spouse who thought to do that to make my hectic morning much better. 

Some may argue that they don't have enough time to make eggs in the morning.  I whole-heartedly disagree.  Even mornings where my alarm goes of at the right time, I usually only have 10 minutes to get breakfast and get out the door.  It really only takes about 3-5 minutes to scrable some eggs, throw a banana or other fruit on the plate and I still have time to sit and eat it or get lunch ready for my not-so-little man to take to school; bonus if I remembered to set the coffee the night before and it's ready when I wake up.  Lately, I've been making green smoothies and grabbing a hard boiled egg (boiled previously) for a protein boost. 

When I think of all those people in the cars I see lined up at fast food places in the morning for breakfast, I wonder why they think they're saving any time.  If I put my breakfast, which usually consists of scrambled eggs, toast and fruit, in a container, it only takes me about 5 minutes to make and I can eat it at my desk once I get to work.  It takes 5 minutes to wait in the drive thru for a McBreakfast loaded with fat, calories, chemicals, and is only called "food" because it's edible and not because it actually contains real, whole food.  By taking the time to make my own breakfast instead of taking the time to go to a drive thru, not only do I save money, but I am nourishing my body with organic, farm raised eggs, whole wheat toast, and seasonal, local fruit.  As an added bonus, I have energy in the morning that lasts to lunchtime instead of a headache, indigestion, and fatigue from eating processed, edible food-like products from a drive thru.  Needless to say, you won't be seeing my car in the line of headlights waiting in the drive thru. 

If you don't make breakfast for yourself in the morning, I would like to encourage you to do so.  Breakfast is the most important meal of the day and shouldn't be skipped and should nourish your body to start the day off right.  Even if you have just 2 minutes as you dash out the door, make a batch of steel cut oats or oatmeal at the beginning of the week and put it in individual containers for each day.  You can even put some honey and nuts or fruit, maybe some milk, so all you have to do is grab, heat, and go or grab and go, heating once you get to work.  You are worth a good, nourishing breakfast with real, whole food.  There's nothing in a drive thru that nourishes or isn't processed.

  1. apple on the go! always works for me. and lots of water holds me over till lunchtime haha. although I typically eat a bowl of Cheerios for breakfast. Better than those darn frosted flakes at least, right? :)
